Ajvar is a gem of Balkan cuisine, a purée of roasted red peppers and eggplants known for its intense flavor and creamy texture. Known as "Balkan caviar", it's the perfect accompaniment for bread, grilled dishes, or simply as an appetizer.

Ingredients
  

  • 10 large red peppers
  • 3 eggplants
  • 150 ml sunflower oil or mild olive oil
  • 2 cloves garlic
  • Salt
  • 1 tablespoon vinegar

Method
 

  1. 1. Roast the peppers, remove the skin and seeds. Cut into pieces.
  2. 2. Roast the eggplants (pierce them first to prevent them from bursting). Remove the skin, chop the flesh.
  3. 3. Mix the two vegetables in a pot, add the paprika, salt and pepper and dry over low heat, stirring constantly.
  4. 4. Gradually add the olive oil, always over low heat. The idea is to remove all the moisture from the vegetables and replace it with oil for preservation.
  5. 5. Put into a hot jar and store in the refrigerator.

  • Smoky flavor: If you can roast the peppers over wood fire or on the barbecue, the smoky flavor will be spectacular and much more authentic.

  • Oil layer: Always cover the surface of the purée with a thin layer of olive oil in the jar. This acts as a natural seal against air and prevents mold.

  • Refrigeration: Once opened, always keep the jar in the fridge and consume within 2 to 3 weeks.
  • Freezing: Ajvar freezes very well. You can store it in small portions to use later without losing its flavor.
