Daal Vada: the recipe for ultra-crispy Indian lentil fritters

Daal Vada is one of the most popular and beloved snacks in Indian cuisine, especially in the south of the country. These small lentil fritters are famous for their irresistible contrast: an extremely crispy crust and a tender, aromatic heart.

Ingredients
  

  • 100 g white lentils Urad Dal
  • 1 piece fresh ginger approx. 3 cm
  • 1 bird's eye chili to taste
  • 1 bunch fresh cilantro
  • Salt
  • Oil for frying

Method
 

  1. Soak the white lentils in water for at least 2 hours.
  2. Drain the lentils well. Blend them in a blender with the ginger, chili, fresh cilantro and a pinch of salt until you get a thick paste.
  3. Heat the oil in a deep pan.
  4. Shape small balls using a teaspoon.
  5. Fry the balls in the oil over medium heat until golden and crispy.
  6. Drain them on paper towel to remove excess oil.

Notes

Chef's tip

For even lighter Vadas, whisk the batter by hand for 2 minutes after blending to incorporate air. Serve them piping hot with a coconut or mint chutney for an authentic experience!
