Aloo Gobi is an emblematic dish from the Punjab region, in northern India and Pakistan. Its name combines the words "Aloo" (potato) and "Gobi" (cauliflower).
It was born as a humble, peasant recipe, designed to make the most of seasonal vegetables. Its secret lies in the balance of spices like turmeric, which gives it its golden color, along with ginger and cumin. Unlike other curries, it's a "dry" dish, which allows the vegetables to caramelize and soak up all the flavor.

Ingredients
  

  • 2 thick potatoes
  • 1 bunch of fresh cilantro
  • 2 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 500 g cauliflower
  • 2 teaspoon grated fresh ginger
  • 1 teaspoon salt
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder or 1 bird's eye chili optional

Method
 

  1. Peel the potatoes and cut them into cubes,
  2. Chop the fresh cilantro.
  3. In a pan, heat the oil and sizzle the cumin seeds for a few minutes.
  4. Then add the turmeric, the cauliflower, the potato cubes, ginger, salt, and mix.
  5. Cover and let cook over low heat for 20 min, stirring regularly every 5 min.
  6. Add the garam masala, fresh cilantro, and red chili (to taste) before serving.
