Ingredients
  

  • 3 carrots
  • 2 medium potatoes
  • 1 courgette
  • 1 leek
  • 1 celery stalk
  • Extra virgin olive oil
  • Salt and pepper

Method
 

  1. Peel and cut all the vegetables into small, even pieces.
  2. In a large pot, heat a little oil and sauté the leek and celery.
  3. Add the rest of the vegetables, cover with water and bring to a boil. Cook over low heat until tender.

Notes

Chef's tip:
Deeper flavor: Sauté the vegetables for 5 minutes before adding the water to caramelize their natural sugars.
Final touch: Add a drizzle of raw olive oil right before serving to bring out the aromas.
